For whoever's tikka is really good....what do you do with the meat before you put it on the skewer? Marinate it? With what, exactly? I am trying to get it perfect and I need help. I am talking for beef/chicken/lamb - anything you can help me with.

Hi there. I love grilling, and I love tikka.
Beef, get a good piece, I usually use tenderloin, if not then u could use in this order, delmonico which is bonless prime rib, ribeye which is a bone in delmonico, NY strip, porterhouse which a boned strip with a tenderloin tail attached, t bone which is a boned strip but no tenderloin attached, then sirloing. ANYWAYs
cut into small chunks, season with salt, pepper, and lots of minced FRESH GARLIC and olive oil. Let marinate for a couple hours, the longer the better, but still awesome.
Chicken, pepper, seasoning salt, a little paprika, olive oil.
OR
Chicken, fresh minced garlic and italian dressing (that's my favorite) it has so much flavor and is so tender. All meats that are seasoned should stay marinated for an over an hour, usually 3.
I used to be a butcher, at the store we owned, and I used to skin and cut deer. FUN STUFF.
I don't like beef tikka. I love chicken tikka though. Sahara's is the best, so you might want to ask them how they cook it. Haha

THANK YOU so much! I never thought of using delmonico for tikka but why not? Its a good cut. Ok, I have a couple of questions...for the beef I keep hearing from other people to also use fresh lime juice in addition to the other stuff but it just didnt sound right. What do you think?
For the chicken, thats funny cause I do it exactly like that - garlic, Italian dressing...so it works for us both.
I love venison.

I donno, for some reason, it's not as flavorful as the chicken, and it's definitely not as tender.

It should be!
first, lotr if you get a good cut, especially tenderloin, you will have that MELT in your mouth.
Cathy, I hate lime juice, the acid in it is supposed to tenderize it and bring out the natural juices, however, I do not like it. I like a nice dry rub, with the olive oil and garlic bringing out the richness of my meat. I do not like venison, it's way to gamy for me, but hey, awafi if you like it.

I marinate beef in wiskey to make it tender. If you want a smoky flavor, use scotch or bourbon. Take the piece of meat (I like flank or skirt steak) and cover it in the wiskey, then grind a combination of black, green, and white pepper (you can buy that at Trader Joe's). Leave it for a few hours. Grill to medium rare (110 degrees internal temperature).

I am very intrigued so the next time anyone leaves any of that liquor over at my place, I'm going to try it. I always have meat around so why not. Is that all you put on it or what?

No, I add freshly ground pepper. But I'm sure you can add anything you want. Just don't salt meats in a marinade bc they will be dry when you cook them.

Beef tikka makes me gag unless the meat is very good quality.

I'm sorry then....beef should never be used for tikka unless the quality is good enough. Beef tenderloin, not stewing meat!
